Small winemakers of Ukraine have been invited to join the series of trainings

Small winemakers of Ukraine have been invited to join the series of trainings on natural grape wine production technique in compliance with international quality and safety standards.

The webinars have been organized by the ITC project with the support of the Association of Gardeners, Grape Growers and Winemakers of Ukraine (UKRSADVINPROM) and the Association of Black Sea Craft Wine Producers.

The key speaker of the training series is Elizaveta Breahna, ITC International Consultant, Acting Director of the National Office for Vine and Wine of Moldova, awarded the Best Winemaker of Moldova in 2013.

Webinars will be held on Zoom every Saturday in June and July 2022. The training series will be launched on 4 June at 11:00 a.m.

During the trainings, the specifics of wine production and quality control at all its stage will be discussed, covering but not limited to the following topics:

– Quality and compliance control of raw materials, including grape varieties, specificity and criteria for determining the harvest date.
– Primary processing and obtaining quality wine materials, including control of auxiliary materials selection (e.g., antioxidants, yeasts, enzymes, etc.), must clarification, maceration, chemical balance of must, must racking.
– Quality and compliance control during the fermentation process.
– Wine material separation from yeast; batonnage on fine yeast lees.
– Quality and compliance control during processing and stabilization of wine materials.
– Wine aging in wooden barrels, including quality barrel selection and wine aging in oak barrels.
– Quality and compliance control during wine bottling and blending, including preparation of wine forbottling and cold sterile wine bottling.
– Quality and compliance control of wine storage.
– Quality control for production of rosé, orange and sparkling wines.
